What's for dinner? Second Harvest donations keep meal preparation interesting

Sometimes, pizza is on the menu.

Other times, it’s lasagna, fish, steaks, potato soup, lobster and — on rare occasion — squid.

“The squid was already prepared, only frozen,” said Leslie Grissom, kitchen manager for the Salvation Army. “So we served it with vegetables, potatoes and salad.”

Did it go over well?

“Not so much,” Grissom laughed.

The food was donated through the Salvation Army’s Second Harvest program. The donations make meal planning an interesting task for Grissom. Often, she won’t know what is being donated until it comes in the door. She will often have only a few hours to plan and prepare a meal.

But the program is a vital part of the Salvation Army’s mission. Grissom said she has a budget of only $42 a day to feed around 200 people. Sometimes, she prepares all those meals herself.

Five restaurants — Olive Garden, Red Lobster, Long John Silver's, Pizza Hut and Pizza Inn — regularly donate food for the program. They donate food that is still servable and not expired.

Sometimes the food is already prepared. Grissom simply adds a few ingredients, and the meal is ready to be served.

Other times, the catch takes some creativity. That’s where soups come in handy, she said.

“Olive Garden regularly sends us baked potatoes,” Grissom said. “I can make a potato soup with those. I have to be budget-minded, though. I don’t like to waste anything.”

She said the restaurants’ donations have enabled her to establish some regular meals. She knows she’ll get cheese biscuits from Red Lobster and pizza from Pizza Hut and Pizza Inn on certain days.

In addition to their charity, the restaurants can claim the weight of their donations for tax breaks.
