Dorm gourmet: Healthy eating while living on campus is possible

Between classes, intramurals, jobs and other activities, Eli Spencer, of Gardner, Kan., sometimes can’t make it to the cafeteria.

The senior at Missouri Southern State University said a hectic schedule makes a trip to a fast-food restaurant tempting. But Spencer has found ways to prepare healthy food from his dorm room.

“I make a lot of simple things,” Spencer said. “Sandwich meat in a tortilla, quesadillas, those kind of things.”

Junior Ivy Love, of Greenfield, found herself in the same position when she first moved on campus.

“My family eats healthy at home, so that’s what I’m used to,” Love said.

Healthy eating is critical for college students, who are almost assured to gain that “freshman 15,” said Jan Dipley, director of health-care services.

“Because students are doing so much, they don’t take the time to cook a complete meal,” Dipley said. “So, they put on the weight.”

Aside from a few pounds, unhealthy eating can lead to a number of health problems for students, including obesity and diabetes, Dipley said. She recommends avoiding potato chips, sugary snacks and — most importantly — soft drinks.

“The soda is what really gets them,” Dipley said. “Students will grab one thinking it will fill them up and kill the hunger.”

Dipley recommends keeping cheese and crackers, lean lunch meats, fresh fruits, granola bars and peanut butter handy in dorm rooms.

And ramen noodles — the ubiquitous staple of a college student’s diet — are OK every once in a while.

“They fill you up, but a package will give you a third of your daily sodium intake,” Dipley said. “That’s not good.”
