Mike Pound: Lending moral support at the barbecue grill

That’s why George Will likes to write about ... well, I’ve never really understood what George Will writes about. I like to write about sports. And food. And beer. And Dick Cheney. And food. And big-time oil executives. And food. And Jimmy Buffett. And food.

I spent some time Wednesday afternoon chatting about food with my friend Chris Orr. I first met Chris a few months ago outside Grace Episcopal Church in Carthage. When I met Chris, he was standing next to a barbecue grill the size of Dallas. A steady, faint stream of smoke was slipping out of the grill, and the smell was good enough to make me gain 10 pounds. Chris opened the grill to show me the large beef briskets and Boston pork butts that were slowly smoking inside.

There were other guys standing around Chris’ grill, but I could tell they were on hand more for moral support than anything else. The reason I could tell that is the guys all seemed to be holding beers in their hands. You can usually tell the guys who are standing around a barbecue grill for moral support by the beer cans in their hands. I’m usually a moral support sort of guy.

Chris was working his grill that Saturday afternoon in preparation for a fund-raiser for the church. Chris cooks at a lot of fund-raisers, and he loves cooking at fund-raisers at Grace Episcopal Church. It is, after all, the church he has been attending most of his life. On that particular Saturday, Chris told me that he would be serving up food for another fund-raiser in late May at the church. I told him to let me know when it came up and I would try to mention it in the column. He said he would and offered to let me drop by the day of the fund-raiser and offer him moral support.

On Saturday, May 31, Chris and a number of church volunteers will be serving up a couple hundred pounds of barbecue. Chris said he will smoke 50 pounds of brisket, 50 pounds of pork butt and 70 whole chickens. He said the briskets, pork butt and chickens likely will spend about 12 hours on the grill, which means he and the other volunteers will fire things up around 6 a.m. The food will be dished up from 6 to 7:30 p.m.

Tickets to the barbecue are $10 for adults and $6 for kids under 12. Along with the meat, Chris will have Cajun-style baked beans, potato salad and coleslaw. It’s pretty much your good deal.

Barbecue sauce will be available for folks who want it, but Chris, who is somewhat of a purist when it comes to his cooking, said you’ll have to put it on yourself.

“I will not put it on,” he said.

The proceeds from the dinner will help pay for the church youth group’s annual trip. The youth trip is a pretty big deal for the church. The kids get to travel to neat places, and learn about different folks and different environments. It’s a combination religious and cultural experience. Last year, Chris said, the kids went to Turkey.

Chris said he’s hoping the dinner will be a success.
