WEBB CITY, Mo. —
There is “fresh” food and then there is “farmers market fresh” for Eden Bakery-Cafe owner Bethany Lewis. With her new downtown cafe, she hopes to demonstrate to Webb City residents what the latter tastes like.
The Vancouver, Wash., transplant had been a mainstay at the Webb City Farmers Market since 2008. She started as a vendor selling fresh smoothies using only natural, local ingredients. Her success led to the conclusion that there was a market in the area for natural foods.
“I had really great feedback when we started doing the smoothies,” Lewis said. “In the (Pacific) Northwest, the idea of a natural eatery place really took off. ... After the success at the farmers market, I started looking into what we could do to expand this idea we had.”
The result is Eden Bakery-Cafe, which opened last month at 33 S. Main St.
“I am excited to be on Main Street here in Webb City,” Lewis said. “People know where this is, and it’s great to be at the center of a busy street. The community has supported us greatly, and the response we’ve had on our Facebook page in the month that we have been open has been amazing.”
Dedication to freshness doesn’t stop at the ingredients; Lewis has a baker three days a week to make bread from scratch.
“A half-hour after we open, we have fresh bread ready to go from our own baker,” Lewis said. “We try our hardest to make everything absolutely from scratch. That is what will set us apart from everyone else.”
Carthage resident Joyce Riggs found out about the new eatery from the building’s previous owners. Riggs made her first trip to Eden Bakery-Cafe on Wednesday.
“This is absolutely wonderful to have this kind of restaurant here,” Riggs said. “I came to this place when this was just a bakery before, but I’m really impressed at how this has expanded. Having a fresh lunch spot with tasty elements makes this an attractive venue. I hope that this really takes off.”
Lewis plans to expand the bakery’s hours once the holiday season has passed.
“We are concentrating on special orders through Christmas,” she said. “Once January comes, I want to start testing out date nights on Friday and Saturdays.”
